Brown Butter Blondies

Ingredients
  • ½ Cup unsalted butter

  • 1 Cup all-purpose flour

  • ¾ Teaspoon baking powder

  • ¾ Teaspoon salt

  • 1 Cup packed light brown sugar

  • ¼ Cup granulated sugar

  • 2 Large eggs

  • 1 teaspoon vanilla extract

  • ¾ Cup chopped walnuts

 

Instructions
  1. Preheat the oven to 350 degrees. Butter an 8x8 pan and line the bottom with parchment paper.

  2. In a small pan, melt the butter over medium heat until it starts to brown and smell nutty, about 5 minutes. The butter can go from brown to burned in the blink of an eye so make sure not to leave it unattended. Once brown, pour the butter into a mixing bowl and allow to cool for 5-10 minutes.

  3. In the meantime, whisk together flour, baking powder sand salt. Set aside.

  4. Add both the brown and granulated sugars to the brown butter and mix well. Next add the eggs and vanilla and mix again. Scrap down the sides before adding in the dry ingredients and mixing until just combined. Lastly, fold in the walnuts and pour batter into prepared pan.

  5. Place cookie balls in the refrigerator for at least 2 hours before baking.

  6. Bake for about 32-37 minutes until a toothpick comes out clean when inserted into the center of the pan. Place pan on a wire rack to cool.
