The story of green chile pork begins in Hatch, New Mexico where the world-famous Hatch green chiles are grown. These peppers, known for their perfect balance of heat and flavor, are the cornerstone of New Mexican cuisine. Growing up, one of my favorite things about fall in New Mexico was the unmistakable scent of fresh roasting green chile. Every August and September, the air fills with this signature, intoxicating aroma. This green chile pork recipe is my ode to that season.
The Magic in the Pot

2 lbs pork shoulder, cubed
1 lb roasted Hatch green chiles, peeled and chopped or one container of frozen Bueno Green chile which can be found mostly in the Southwestern states
1 large yellow onion, diced

1 tsp ground cumin
Salt and pepper to taste
2 tbsp flour
2 tbsp avocado oil
4 cups chicken broth
